This was taken late in the afternoon (note that I changed the caption). In the case of this formation, once the sun drops behind the mountain to the west (behind the camera) it wouldn't be as picturesque from a color standpoint. As for the look of the sky at sunset, you might be right. Depends on the weather conditions to the west that evening. I'm thinking of all those spectacular photographs I've seen of high-based Arizona thunderstorms with a red backdrop.
